Alright, so it's been a few day's since I've posted.. As my Munster Man is growing, we are adjusting to his "new accomplishments", plus the boy and I have been really busy getting the house cleaned and more organized since we are slowly losing square footage in our house!

So since my last post I have made a few things that I'm going to be sharing with ya'll today. The first one was Carmel Apple Cheesecake! And HOLY CRAP! It was amaZingly DElicious! I did take a picture of this one, not a very good one.. bUT it will work..


 Okay, so now that you've seen the goods, I GUESS I have to share the recipe with you guys! SO here it is! (This recipe was found on The Girl Who Ate Everything's Blog)


Caramel Apple Cheesecake Bars
Crust:
2 cups all-purpose flour
1/2 cup firmly packed brown sugar
1 cup (2 sticks) butter, softened
Cheesecake Filling:
3 (8-ounce) packages cream cheese, softened
3/4 cup sugar, plus 2 tablespoons, divided
3 large eggs
1 1/2 teaspoons vanilla extract
Apples:
3 Granny Smith apples, peeled, cored and finely chopped
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Streusel topping, recipe follows
1/2 cup caramel topping
Preheat oven to 350 degrees F.
In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender (or 2 forks) until mixture is crumbly. Press evenly into a 9x13 baking pan lined with heavy-duty aluminum foil. Bake 15 minutes or until lightly browned.
In a large bowl, beat cream cheese with 3/4 cup sugar in an electric mixer at medium speed until smooth. Then add eggs, 1 at a time, and vanilla. Stir to combine. Pour over warm crust.
In a small bowl, stir together chopped apples, remaining 2 tablespoons sugar, cinnamon, and nutmeg. Spoon evenly over cream cheese mixture. Sprinkle evenly with Streusel topping. Bake 40-45 minutes, or until filling is set. Drizzle with caramel topping and let cool. Serve cold and enjoy!
Streusel Topping:
1 cup firmly packed brown sugar
1 cup all-purpose flour
1/2 cup quick cooking oats
1/2 cup (1 stick) butter, softened
In a small bowl, combine all ingredients. I like to really combine it by using my clean hands to thoroughly combine the butter into the mixture.

I also wanted a quick dinner after a late trip to the grocery store (that seemed endless.. with an 8 month old and being unorganized, it was a disaster) I wanted some quick and easy to make..So I remembered, yet another, recipe I had seen on pinterest (Yeah I'm addicted to it.. Follow me on Pinterest :) I forgot to take a picture of them, so I will post the one that is on pinterest..




Crescent Pepperoni Roll-Ups

1 can refrigerated crescent rolls
40 slices turkey pepperoni
4 pieces of mozzarella string cheese, cut in half
garlic powder
pizza sauce

Preheat oven to 375.

Unroll crescent rolls and separate into 8 triangles.  Place 5 slices of turkey pepperoni on each crescent roll.  Top pepperoni with string cheese half and roll up.  Sprinkle crescent rolls with garlic powder.  Place rolls on baking sheet and bake for 12-15 minutes, or until golden brown.  Serve with a side of warm pizza sauce.
 
Although I altered mine a bit... I used a pre-rolled dough for a whole pizza and made a big pizza roll! It was SO delicious and very simple to make! I also added some sugar into the jar-o-sauce I purchased :)
Let's see.. what else have I been up too? OHH I also made Cake Batter Pancakes!! They were SO delicious, I was in a bit of a hurry when I made these so again no picture. They were seriously some of the best pancakes I've ever eaten!! I would definitely recommend them to anyone.. I been considering making a huge batch of the dry batter and putting them into a canister with how many eggs per cup of batter etc.. As soon as I finish that project I will post pics and the amounts I used!! BUT for now.. here is the recipe and again a stolen picture, lol.. I got this recipe from pinterest through Chef In Training 's blog.
CAKE BATTER PANCAKES
Found recipe on: How Sweet It Is

makes about 12 pancakes
  • 1 1/2 cups all purpose flour
  • 2/3 cup yellow cake mix
  • 1 tablespoon sugar
  • 3/4 teaspoon baking powder
  • pinch of salt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1-2 cups milk
  • assorted sprinkles
 
Combine flour, cake mix, baking powder, sugar and salt in a bowl and mix. Add 1 cup of milk, egg and vanilla extract and stir until smooth. You want the batter to look like regular pancake batter; not too thin, not too thick. This will vary greatly on the brand of cake mix you use. Start with 1 cup of milk and add more if needed.  *You may need to have small taste test to see if the pancakes are flavored enough, if not, add a little more yellow cake mix until desired flavor is reached**

Preheat a skillet on medium heat (or an electric grilled and turn it to 250 degrees). Fold desired amount of sprinkles into batter. Pour batter in 1/4 cup measurements onto skillet and let cook until bubbles form on top, about 2-3 minutes. Flip and cook for 1 minute more. Serve with vanilla glaze.

GLAZE
  • 1 cup powdered sugar
  • 1/2 tablespoon milk
  • 1/2 teaspoon vanilla extract
  • assorted sprinkles
Mix milk, extract and powdered sugar until glaze forms. You may need to add a little more sugar or water/milk to reach desired consistency. I needed to add more milk.  Mix into glaze and drizzle on pancakes.

Alright, that's it for the cooking..

I've also been crocheting a few hats, but they aren't 100% finished yet, so I will be adding those sometime tomorrow I hope! The first 2 I've made that can actually fit MY head!! I'm considering opening a Etsy account and trying to sell my creations. I'm also going to start dabbling in making some little itty bitty shoes for newborns and babies! They are too adorable not to try, plus a few of my friends are pregnant, so what better than a handmade gift for the baby shower! On of my close friends just found out she was pregnant, I can't WAIT to find out what she is having so I can make her a bunch of little goodies and put them in a cute little basket, Oh she will LOVE them!! Anyways..


We took our son to a Discover the Dinosaurs that our local convention center was having for the weekend, we had seen it on the commercials during The Voice (SN: I LOVE Blake Shelton) so I thought why not! Something fun and different for all of us to experience even if Grayson is a little small and won't remember, we took lots of pictures at least we can show him them when he gets older :) Here are a few of my favorites!
We had so much fun! Even as adults it would have been a great thing to do :) I need to keep and eye on the things going on around here!! I want him to be able to experience as much as he can while he is young that way he has lots of great memories and as much fun as he can in his childhood. Anyways!! We had a great weekend! We also took a trip to Lowe's to price a few things we are looking to remodel at our home! And we are also thinking of fencing in our back yard for our furbabies and Grayson when he gets a bit older!! Again I'm rambling!! Sorry!!!
